## Core idea

In Baking --
- For cakes, cupcakes, quickbreads: 1 teaspoon baking powder and 1 tbsp vinegar
- For waffles, pancakes, bran muffins, breads, oatmeal cookies: ground flaxseed 1 tbsp with 3 tbsp water
- For breads, muffins, pancakes, cakes, and pancakes: half a mashed banana
- For moist cakes, and brownies: applesauce 1/4 cup
- For dense moist cakes and brownies: silken tofu
  
For Thickening --
